At dawn, when the ground is still covered in a blanket of early morning dew, one is fortunate to find a very precious fruit -the truffle.
The truffle grows only in certain areas of our region, but it is very prolific in the provinces of Pisa, Siena, and Florence, where we have the good fortune to be situated.
The truffle can be found all year round, but each season is characterized by its own type of truffle.
In the summer, we find the black truffle.You will find that the black truffle is excellently used in a variety of pasta dishes.
In the early spring, we find a truffle that is called “Il Marzolo”. This truffle is delicate, and gives a wonderful aroma and flavour to many dishes.
At the end of the summer, grows the most sought after truffle, the white truffle. This truffle provides our winter dishes with an intense and persistent aroma, making each meal an unforgettable one!
