Francesca – Chef Agriturismo Diacceroni

Ciao everyone – Chef Francesca here! I selected some products for you to make you feel like you’re back in Tuscany… and I will explain how to use them in perfect Italian style.


There are few better ways to begin a meal than with some delicious aged cheese topped with pear and pine nut jam that perfectly exhaults its flavor. The saltiness of the cheese is complimented by the sweetness of the pears which will prepare your palate for the first course about to arrive!


If I think about Sundays at my grandmother’s house, I remember the exact smell of her ragù and fresh pasta. Often she made lasagne with it and I can assure you it is the best in the world! That’s why I sought out to capture those memories of my ‘nonna’ into a jar with our Tuscan ragù. It’s delicious because we use quality ingredients and cook exclusively with our extra virgin olive oil and cook everything low and slow.
Our ragù is perfect to be tossed with our organic pappardelle pasta. Enjoy it with a good glass of Sangiovese e Merlot di Toscana IGT red wine.


And then Christmas came….and there is no Christmas without pappardelle and wild boar ragù. At Diacceroni we marinate the meat in red wine for at least 24 hours to tenderize it and then cook it with the most aromatic herbs we harvest here from our garden: thyme, melissa, bay leaves and more. My favorite thing about this product is that we prepare everything by hand – from breaking down the freshly hunted wild boar to cutting it into big chunks to cook in the sauce.

My ‘nonno’ always said that a good plate of pasta should be eaten with a good glass of wine.
In this pack, in fact, you will find our best red wine: Chianti Riserva DOCG. It spends 14 months aging in oak barrels and is a full bodied and rigorous red wine, ideal for game meats like wild boar.


To finish off your dinner, I want to impress you with an unusual pairing: a scoop of vanilla ice cream topped with a few drops of our balsamic vinegar ‘Nerum’. This vinegar is dense and full bodied with the traditional sweet and sour note. It will surprise you and all your guests!
