The Classic Method Sparkling Wine is the perfect representation of wine intended as a simple pleasure. The “Diacceroni Classic Method Sparkling Wine” was born from the experience of our winemaker Dr. Alfredo Tocchini, who has been able to discover the real significant potential existing in an almost forgotten and unknown DOC wine production area. Our Classic Method is produced by a farm owning over 150 hectares of vineyards, of which 70% of the grapes grown are white grapes. The farm is located on a plateau at about 300 meters above sea level and can count on powerful clay soils, perfectly suited to high level wine production. For our Classic Method Sparkling Wine we prepare many different types of white wines from several international varieties such as Chardonnay, Aligote, Sauvignon,and Pinot, as well as local varieties such as Feteasca a., Galbena do O. or Sarba. All the wines are tested by the chief winemaker to prepare the base wine blend, this base is known in the classic method sparkling wines production world as “Cuveé”, and it is the blend that will undergo the process of secondary fermentation. This operation is the heart of real sparkling wine, as a second fermentation takes place directly in the final bottle thus obtaining the prestigious “bubbles” typical of these wines. The yeasts will then rest for a long time, at least eighteen months, in contact with the now sparkling wine to give movement, soul, and create flavors for our glasses. It is a special wine appreciated all over the world and with a growing production which now stands at around 30,000 bottles per year.
