The “Diacceroni Classic Method” was born from an idea of our enologist Alfredo: a DOC unknown to most but in a territory where wine has been produced since the time of the Roman emperors, Moldavia – Romania. A region in which an ancient winemaking tradition is present in our day reinterpreted with the experience and knowledge of the Italian winemaking. The 170 hectares of vineyards of the company are situated on a splendid plateau about 300 meters above sea level with powerful clayey soils, perfectly suited to high-level wine production.
Perfect for every moment of the day, from aperitifs to raw seafood to fish dishes. Also able to fully enhance meat dishes, fried vegetables and cheeses.
The “Diacceroni Metodo Classico” sparkling wine is obtained from a Cuvé, an assembly of the best white wines available with an important part of Pinot n. combined with other grapes in slightly different percentages depending on the year. The (still) wines of the sparkling base are assembled in variable percentages creating the “Cuvé” which then passes the bottling and second fermentation process (“Tirage”). Once the yeasts have finished fermentation in the bottle they rest on the walls of the same (which is lying horizontally) in contact with the wine for at least 18 months. Subsequently there is the separation of the yeasts from the wine (“dégorgement”) and the capping of the bottle with the well-known cork that everyone knows. The sparkling wine, at this point, is ready for consumption.
